The secret of this Italian classic from Modena lies in the slow and gentle preparation of the must from the Trebbiano grape. Careful ageing in oak, chestnut, cherry or mulberry barrels brings this vinegar to perfection. The closely guarded family recipes, passed down from generation to generation, guarantee a product of outstanding quality and distinction. Our balsamic vinegars are not pasteurised (heat treatment), which preserves their high nutritional value. Cascina San Giovanni offers 3 balsamic vinegars. Each quality is slightly more valuable, wood-accentuated and thicker than the previous one due to additional ageing and higher concentration.
Aceto Balsamico di Modena IGP, 3 leaves: Strong woody flavour. Thanks to its balance between acidity and sweetness, it goes well with fennel salad with Parmesan cheese, Trevisano rocket and red chicory salad. It is also an excellent accompaniment for fruit salads or meat marinades.
