Careful ageing in oak, chestnut, cherry or mulberry barrels brings this vinegar to perfection. The closely guarded family recipes, passed down from generation to generation, guarantee a product of outstanding quality and distinction. Our balsamic vinegars are not pasteurised (heat treatment), which preserves their high nutritional value. Cascina San Giovanni offers 3 balsamic vinegars. Each quality is slightly more valuable, wood-accentuated and thicker than the previous one due to additional ageing and higher concentration.

It goes well with fresh, roasted porcini mushrooms, "Fritata con patate", desserts such as "Gelato" or "Zabaglione all'Aceto Balsamico", or for dipping with parmesan or fresh vegetables (Pinzimonio).
