The extra virgin olive oil from organic cultivation consists of the varieties Picholine, Carolea, Leccino, Nociara, Cellino and Olivastra from the Itria Valley and the surrounding areas in Apulia, Italy. The olives are harvested by hand or with shaker nets and cold-extracted (cold-pressed). A purely mechanical, gentle process to preserve all of the olives' health-promoting ingredients.
