Our pasta dough is made from Italian durum wheat semolina, free-range eggs and fresh wild garlic. Extraction through a bronze mould produces the rough surface that is so important for sauce adhesion. The slow drying process at low temperatures ensures that the valuable nutrients are retained and the pasta remains "al dente" during the cooking process.
